Reflections before the holiday

Tomorrow begins the week during which Jews don’t drink beer. And “on the way” I want to publish some reflections…

So, here I am now, slowly sipping an IPA from a local craft brewery. It seems like everything is right: the hops smell like citrus, and the bitterness is nice and lingers. But you know what I’ll tell you? All this fuss about craft beer sometimes feels like chasing the latest fashion. Today, sour beers are trendy, tomorrow it’ll be strong stouts with smoked paprika and who knows what else.

Now, I’m not saying experiments are bad; they help things get better. But sometimes it feels like all this unusual stuff makes us forget what beer is really about. We forget, you know, that beer is mainly about balance, about the flavors working well together, and not about shocking someone who doesn’t know much about beer with something crazy.

I remember the first time I tasted real Czech beer. No double hops, no weird mixes of malts. Just a clean, refreshing taste that makes you want to drink it again and again. And that, I think, is where the real skill of a brewer is – making something simple but perfect. Like a good jazz musician: few notes, lots of meaning.

So, as I raise my glass, I hope we all remember the basics, appreciate the classics, and don’t just blindly follow every new trend. Because the real enjoyment of beer – it’s timeless and not about trends. The main thing is that it’s brewed with heart and understanding. And the rest will follow.
