Today, sour beers are trendy, tomorrow it’ll be strong stouts with smoked paprika and who knows what else.

Now, I’m not saying experiments are bad; they help things get better. But sometimes it feels like all this unusual stuff makes us forget what beer is really about. We forget, you know, that beer is mainly about balance, about the flavors working well together, and not about shocking someone who doesn’t know much about beer with something crazy.

I remember the first time I tasted real Czech beer. No double hops, no weird mixes of malts. Just a clean, refreshing taste that makes you want to drink it again and again.
